HOW TO: Make Organic Homemade Lemon Ice Cream Sandwiches

What you will need for the Lemon Ice Cream:

  • 3 large organic free-range eggs
  • 2 cups organic heavy whipping cream
  • 1 tablespoons grated lemon zest
  • 1 cup organic sugar
  • 1/2 cup lemon juice
  • 1/2 teaspoon pure vanilla

Step 1: Heat the Custard

In a medium saucepan combine the lemon zest, lemon juice, sugar, eggs, vanilla and 1 cup of heavy whipping cream. Cook over medium-high heat and stir constantly until it comes to a simmer.

Step 2: Strain the Custard

Use a fine strainer to strain the custard into a bowl, then chill in the refrigerator until the custard is cold.

Step 3: Finish the Custard

Add the remaining cup of heavy whipping cream and pour into a shallow dish (about 1 inch thick), cover with wax paper and freeze.

  • 1 lb organic unsalted butter
  • 3 cups organic sugar
  • 2 large organic free-range eggs
  • 1 teaspoon salt
  • 1 teaspoon pure vanilla
  • 5 cups organic flour

Step 1: Mix it Up

In your electric mixer add the butter and sugar and beat on high speed until light and fluffy. Add the eggs, vanilla and salt, then mix again until well combined. With the mixer on low-speed add the flour in small batches.
