If there is one cookie that always makes me think of the holidays, it is gingerbread men. Whether you pair these festive cookies with a large glass of soy milk or use them to decorate your holiday tree -- they just scream "the holidays are here!" They evoke visions of the fun the holidays bring and they make your house smell wonderfully inviting too!
Last night, I spent the evening with my family baking vegan gingerbread men. These little guys may be vegan, but they pack the same deliciousness as their non-vegan counterpart. Read on to learn how to make my easy vegan gingerbread men and indulge in the kid-favorite holiday tradition of biting into these cute little cookies.
Step 1: Gather Your Ingredients
- 2 cups organic whole wheat flour
- 1/3 cup organic vegetable oil
- 3/4 cup organic sugar
- 1/4 cup organic molasses
- 1/4 cup organic soy milk
- 1 1/2 teaspoons ginger
- 1/2 teaspoon organic baking soda
- 1/2 teaspoon organic baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cloves

Step 2: Get Gooey!
In a medium bowl whisk together the oil, sugar, molasses, and soy milk.
Step 3: Mix It In!
Combine all of the dry ingredients in another medium bowl, then add it to the gooey mixture. Mix until well combined.
Step 4: Let It Chill!
Roll the dough into a large ball, then flatten it. Cover and refrigerate for 1 hour.
Step 5: Roll It Out!
Preheat the oven to 350° and lightly grease your cookie sheets. Roll the dough out on a parchment and floured surface to 1/4 inch thickness. (The parchment is very important or the dough will stick to your counter-top).
Step 6: Cookie Cut It Up!
Use a gingerbread man cookie cutter to cut out your gingerbread men.
Step 7: Bake Them!
Bake the gingerbread men for 8 minutes. If you are going to use the cookies as a decoration, punch a hole in the top before cooking with the end of a straw.
Step 8: Let Them Cool, Decorate and Gobble Them Up!
Remove the cookies from the oven, place on a cooling rack and let them cool. Then decorate as you desire! We used a vegan icing made from 4 cups of powdered sugar, 1/4 cup water and a 1/2 teaspoon of vanilla extract.
