HOW TO: Bake Vegan Gingerbread Men Cookies For The Holidays

Vegan Gingerbread Men

  • 2 cups organic whole wheat flour
  • 1/3 cup organic vegetable oil
  • 3/4 cup organic sugar
  • 1/4 cup organic molasses
  • 1/4 cup organic soy milk
  • 1 1/2 teaspoons ginger
  • 1/2 teaspoon organic baking soda
  • 1/2 teaspoon organic baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cloves

In a medium bowl whisk together the oil, sugar, molasses, and soy milk. Combine all of the dry ingredients in another medium bowl, then add it to the gooey mixture. Mix until well combined. Roll the dough into a large ball, then flatten it. Cover and refrigerate for 1 hour. Preheat the oven to 350° and lightly grease your cookie sheets. Roll the dough into a large ball, then flatten it. Cover and refrigerate for 1 hour. Roll the dough out on a parchment and floured surface to 1/4 inch thickness. (The parchment is very important or the dough will stick to your counter-top). Use a gingerbread man cookie cutter to cut out your gingerbread men. Bake the gingerbread men for 8 minutes. If you are going to use the cookies as a decoration, punch a hole in the top before cooking with the end of a straw. Remove the cookies from the oven, place on a cooling rack and let them cool. Then decorate as you desire! We used a vegan icing made from 4 cups of powdered sugar, 1/4 cup water and a 1/2 teaspoon of vanilla extract.
