HOW TO: Bake Miniature Organic Vegan Fruit Tortes

Step 1: Gather the Ingredients

For the crust:

  • 1 1/3 cups organic flour
  • 2 tbsp organic sugar
  • 1/4 tsp salt
  • 8 tbsp Earth Balance (or your favorite butter substitute)
  • 1 1/2 tbsp ice water

For the filling/pudding:

  • 19 ounces organic tofu
  • 8 ounces semisweet chocolate or cacao powder
  • 3/4 cup organic sugar or 4 tbsp agave
  • 2 tbsp organic coconut milk
  • 1/4 tsp salt

Step 2: Mix the Dry Ingredients for the Crust

Add the flour, sugar and salt to a food processor and pulse a couple of times.

Step 3: Add the Wet Ingredients for the Crust

Add 1/2 of the Earth Balance and pulse 4 times. Then, add the rest of the Earth Balance and pulse again. Then, add the ice water and pulse several more times.
