What You Need
For the whoopie pies:
- 2 c. organic whole-wheat flour
- 1/2 c. organic brown sugar
- 1/2 c. organic pumpkin (pureed)
- 1/4 c. organic milk
- 1/4 c. organic butter
- 1 1/2 tsp. baking powder
- 1 tsp. organic cinnamon
- 1/2 tsp. sea salt
- 1/4 tsp. baking soda
- 1/4 tsp. organic ginger
- 1/4 tsp. organic nutmeg
- 1/4 tsp. organic cloves
- 2 organic eggs (or egg substitute)
For the filling:
- 8 oz. organic or soy cream cheese
- 1/4 c. honey
Step 1: Mix the Dry Ingredients
First, preheat the over to 375° and grease a cookie sheet with organic butter. Then, using your stand mixer, mix all of the dry ingredient together.
Step 2: Mix the Wet Ingredients
Add in the pumpkin, butter, milk and eggs, and then mix until well combined.
Step 3: Pipe
Using a pastry bag, pipe round circles on your cookie sheet.
Step 4: Bake
Bake the whoopie pies for 10 minutes, let cool on a wire rack.
