  • New York City chef and new dad, Daniel Angerer has added cheese made from his wife’s breast milk to his menu. While eccentric foodies and their culinary masters sometimes travel great lengths to procure hard-to-find ingredients that satiate exotic palates and put them on the cutting edge of innovation, Angerer found his “gold” ingredient right at home… sleeping next to him. But his idea to make cheese from breast milk could possibly be one of the year’s biggest D.I. Why? moments.

    This is possibly where locavore enthusiasm, a preference for humane dairy products, and the blurry mind state that too many sleepless nights as a new parent intersect — but who am I to judge? The chef calls his creation Mommy’s Milk Cheese and has been offering patrons of Klee Brasserie recipes and tips.

    “Being a chef,” Angerer explained to Grub Street, “you’re curious about anything in terms of flavor — you look out for something new and what you can do with it.” “We’re just grateful that he didn’t get any ideas about his wife’s placenta,” says the Village Voice. And I’m sure we can all agree on that note.

    Did I mention that this is a D.I.Y. post? Yes, you too can create your own Mommy’s Milk Cheese by following Angerer’s recipe posted on his blog… a state of lactation and breast milk expressor are, of course, required.

    My Spouse’s Mommy Milk Cheese Making Experiment (basic recipe using 8 cups of any milk – yields about ½ pound cheese)

    4 cups mother’s milk 1½-teaspoon yogurt (must be active cultured yogurt) 1/8-tablet rennet (buy from supermarket, usually located in pudding section) 1 teaspoon sea salt such as Baline

    The milk from regular cheese comes from the teets of cows and goats…why does that not disgust you?

    This is a great way to have your children eat cheese. Stop buying that processed garbage and fresh breast milk is the best! Not to mention as breast feeding mothers we eat sooo healthy…it can only be full of the best vitamins!
    For the HIV comment…do your research, if you cook the milk it kills any bact. So it is really safe. But again if you don’t like the idea…DON’T TRY IT!

    HIV stands for Human Immunodeficiency VIRUS. Virus’ are not killed by heating or cooling for that matter ( I think you are confusing them with Bacteria which are indeed killed by excessive heat).

    Just further info: Virus are non-biological matter that is capable of generating a protective covering around it when faced with inhospitable environments, such as excess heat or cold. That is why we Vaccinate against viruses. A vaccination is a “diluted” form of the virus (such as the Flu vaccine), which is injected in our bodies. This is done to stimulate our immune system to produce anti-bodies against that virus that are capable of combating the actual ‘infection’ virus. Finally, the reason why HIV is so deadly is that it attacks the immune system itself. That is why a vaccine for this is difficult to generate.

    am’s comment about viruses not is wildly inaccurate.

    Viruses are indeed killed by heating, more readily than bacteria since viruses can’t sporulate. Some viruses are comparatively resistant to heat-killing, but a boil will kill almost any virus.

    There is an infectious agent that can’t be destroyed by (ordinary) boiling: prions, the causative agent in bovine spongiform encephalopathy/”mad cow disease”. But these are unrelated to viruses.

    that aside, GROSS. really really gross. goat cheese is about as far as i’m gonna go.

    This is a very STUPID media stunt and he will have to pay very badly for this.
    HORRIBLE. But with one benefit, his wife’s breast has become very famous.

    If my husband was a chef, and willing, I would DEFINITELY ask him to make some breastmilk cheese for me. Well, not for me, for our one year old. I cannot think of a better snack… except breastmilk yogurt!
